Why Does Dry Ageing Matter?
Every Merilli Angus carcass is dry-aged for 21 days. During this time:
- Moisture naturally evaporates
- Flavour becomes more concentrated

- Tenderness develops naturally
This process reduces saleable weight but significantly improves eating quality.
Many supermarket products are processed and packaged much sooner, meaning less flavour development occurs.
